Improved tax management in Profit data

Refined tax breakdown in Profit datasets. Tax portions extracted into separate lines with is_tax=true.

A refined tax breakdown will be added to Profit datasets and dashboards, improving transparency in how taxes affect reported profits.

Data Model Changes:

In finance_profit_ledger and finance_profit, taxes previously embedded within fees are extracted into separate tax lines, and tax portions are now marked with is_tax = true
Category, subcategory hierarchies and event signatures remain unchanged
In finance_profit_metrics, Tax Liability and Net Profit metrics are recalculated

If you apply custom computations on these metrics to account for fees taxes, make sure to remove them from your reporting.
